When a friend asked me to join her for lunch “Griff and Willy’s” on the bypass highway in Richland, I was shocked to find out that there was a restaurant in that location. As I drove up, I wondered what I was getting myself into. It was about 2:00 and there were a few cars in the parking lot, so I had my doubts. I ordered the barbequed chicken because good barbecue is hard to find and I was hoping for a miracle. When it came out I was pleased by the crispy skin and tantalizing smell. I was amazed when I cut into it at the juiciness and tastiness of the huge piece I received. Savoring each bite, I even licked my fingers when they picked up some of the chef’s wonderful homemade barbeque sauce. Boy, would I love that recipe. I kept eating, but it seemed that my chicken was not shrinking, so I had to get a doggy bag for my leftovers, which was as wonderful warmed up as it was the first time. Now, I owe my friend lunch, and for sure we will go to back to “Griff and Willy’s”, soon.
