What the Pho?

Have you noticed the growing number of restaurants that have popped up in the Tri-Cities and just as quickly gone-out of business with the word “Pho” in their name? I have. And it made me start asking What the Pho? Or should I say ”What is Pho?” This article will demystify Vietnamese cuisine, so that you can know how and what to order to begin your food adventure. Simply follow this advice and get a fantastic meal.
What to drink?
For a unique beverage, try a Vietnamese coffee. This isn’t any ordinary coffee, this is an experience. Two glasses are brought to your table, one filled with ice and a spoon and the other is topped by a special drip filter filled with rich coffee grounds. As the hot water is poured thru it, the fresh brewed coffee drips into sweet condensed milk. Once the coffee confection has finished brewing, the filter is removed and ice is added. It is the creamiest caffeine heaven you have ever experienced!
Want a starter?
Start off with an order of crispy fried egg rolls or fresh spring rolls if you don’t want fried foods. A spring roll contains fresh vegetables; bean sprouts, carrots, cucumber, scallions, mint, and cilantro with large shrimp wrapped in rice paper. Delectable! Dip them in fish, hoisin or soy sauces, typical Vietnamese condiments that are at your table.
How about soup?
If you like noodle soup, you should definitely order a tasty bowl of Pho (Vietnamese beef or chicken noodle soup). It is thin slices of braised beef or chicken immersed in broth with rice noodles. Pho comes complete with a side of fresh Thai basil leaves, lime slices, bean sprouts and hot peppers so you can customize your Pho to you personal taste. The rich, aromatic pho broth is prepared by boiling the beef or chicken bones for hours along with spices such as ginger, cloves, star anise and cinnamon. Cardamom is also sometimes used in the broth. Basil is often added to chicken-based pho.
Sauces such as fish sauce and hoisin, a thick dark plum sauce, often accompany pho. Some people like to add a spicy Thai sauce called sriracha. Pho is usually eaten with both chopsticks and a spoon, as pho lovers want to be sure to enjoy every drop of the rich and satisfying broth.
